Abstract:
PROBLEM TO BE SOLVED: To provide a method for producing a pancake in which a pancake having satisfactory appearance, texture, and taste, and excellent preservability can be stably produced, and a pancake dough used for the method.SOLUTION: There is provided a method for producing pancake in which dough containing wheat flour, sugar, glycerin if necessary, and water is baked, in which the dough contains 0.5 to 1.3 mass% in total of sodium acetate and glycine for the total mass of the dough as a reference, the content of the glycine is 0.03 to 0.15 mass%, and the total content of the sugar and glycerin if contained is 23.2 to 25.6 mass% for the total mass of the dough as a reference. There is also provided a pancake dough used for the method containing wheat flour, sugar, glycerin if necessary, and water.SELECTED DRAWING: None
