Abstract:
PROBLEM TO BE SOLVED: To provide a method for producing a porous dry food excellent in texture, and a porous dry food production device.MEANS FOR SOLVING THE PROBLEM: Provided is a method for producing a porous dry food comprising: a freezing step; a first heat drying step; a vacuum drying step; and a second heat drying step. In the freezing step, an object as a food is frozen. In the first heat drying step, the frozen object is heated and is dried so as to form a dried layer on the surface of the object. In the vacuum drying step, the object dried in the first heat drying step is dried under a pressure-reduced environment. In the second heat environment step, the object dried in the vacuum drying step is heated and dried.SELECTED DRAWING: Figure 2
