To provide a technique for production of a new potato food.SOLUTION: A production method of a potato food includes a preparation step of heating a raw material potato in a state of being immersed in an edible oil. The preparation step is a step which includes both heating the raw material potato in the state of being immersed in the edible oil and applying an alternating electric field to the raw material potato in the state of being immersed in the edible oil.SELECTED DRAWING: None
