Abstract:
PROBLEM TO BE SOLVED: To provide a composition containing a processed ginger product with enriched shogaol.SOLUTION: The composition contains a processed ginger product with enriched shogaol (excluding ginger extract). Relative to the processed ginger product 1 g, the content of 6-shogaol is 6.0 mg or more (600 mg/100g or more); the ratio in contents of 6-shogaol (S) to 6-gingerol (G) (6S/6G) is 2 or more; and the moisture content is 30 wt.% or less. The composition is preferably a functional food, a food additive or supplement, or a cosmetic composition.SELECTED DRAWING: None
