Abstract:

PROBLEM TO BE SOLVED: To provide a method for producing a processed leaf, by which residual amount of harshness can simply be reduced.
SOLUTION: In the method for producing the processed leaf, a step for treating the leaf to be processed with a tannin decomposing enzyme is provided. In the method, a step for feeding a solution of phosphate to the leaf to be processed after the enzyme-treating step is preferably provided and a step for boiling the leaf to be processed is preferably provided before and/or after the enzyme-treating step. According to the method, since tannin which is one of main ingredients of harshness discharged from the leaf is decomposed by the enzyme, the tannin content of the processed leaf is effectively reduced. As a result, occurrence of discolored part of brawn, medium brawn, etc., on a food part which comes into contact with the processed leaf is reduced.
