To provide a method for producing a puffed foamed food, by which an expensive large-sized apparatus being a defect is made into inexpensive small-sized/lightened equipment by using a toggle mechanism and the equipment is readily used, which contributes to the development of the new product of the puffed foamed food yet in a small amount of a product, secures an amount of production and increases an additional value by using a raw material which is hardly automatized and the production equipment therefor.
The method for producing the puffed foamed food comprises a process for heating the pressure application part of the production equipment to 150°C-350°C, a process for inserting a food having a water content preadjusted to 6 wt.%-40 wt.% into the pressure application part, a process for heating and pressurizing the food by using the toggle mechanism, a process for releasing the pressure application after 0.1 second-6 seconds and a process for taking out the food. The production equipment is used for the method.
