Abstract:

To provide a method for producing quickly cookable rice by which even a small amount of the rapidly cookable rice with a good taste having a just cooked flavor comparable to that of usual cooked rice and distributable at normal temperature is simply produced in a short time by using a pan, a microwave oven, or the like.

This method for producing the quickly cookable rice comprises the following steps. A step of dipping rice dipped in water in hot water at ≥70°C and absorbing water to 40-52 wt.% water content of rice, a step of filling and hermetically sealing the rice dipped in the hot water in a pressure-and heat-resistant packaging material and pressurizing and thermally sterilizing the packaged rice, and a step of keeping the pressurized and thermally sterilized packaging material at 2-15°C for 10-96 h and thereby reducing the gelatinization degree of the rice.
