Abstract:
To provide a refined edible oil/fat in which light-exposure odor is improved and a method for producing the same, and a method for improving light-exposure odor of edible oil/fat.SOLUTION: Provided is a method for producing refined edible oil/fat, in which an oil/fat is subjected to a step of bringing into contact with ozone, followed by to a step of deodorization at 120 to 230°C, to produce refined edible oil/fat. It is preferable that the step of bringing oil/fat into contact with ozone is to bring oil/fat into contact with ozone for 1 minute or more. Further, it is preferable that the oil/fat contains soybean oil by 10 to 100 mass%. A refined edible oil/fat produced by said production method.SELECTED DRAWING: Figure 3
