Abstract:

To provide a method for producing retort food capable of easily producing retort food having good palate feeling and having excellent appearance, flavor, and taste of the same even after retort sterilization at low cost, and retort food.

A method for producing retort food carrying out retort sterilization process while food is sealed in a container wherein the food is constituted by covering meet with a surface film includes a moisture reducing step for reducing moisture of the food, a sealing step for putting the food whose moisture is reduced in a container, then injecting gas into the container, thereby forming a head space around the food, and sealing the container, and a retort sterilization step for carrying out the sterilization process by heating and compressing the sealed container, at least the moisture released from the food is dispersed in the head space, the moisture released from the food in the retort sterilization step is suppressed from coming into contact with the food.
