To provide a method for producing several kinds of cereal malt miso by which several kinds of cereal malt comprising mixture of some kinds of cereals and several kinds of cereal malt miso comprising several kinds of cereal malt used as raw material can be easily produced, and flavorous and highly nutritious miso can be obtained using the several kinds of cereal malt as raw material.
The method for producing several kinds of cereal malt miso comprises the following process: mixing some kinds of cereals together; soaking the mixture in water so as to make the mixture to absorb water; steaming and cooling the water-absorbed mixture followed by inoculating Aspergillus oryjae to the cooled mixture; heat-reserving the mixture to produce malt so that some kinds of cereals can be subjected to malt production so as to easily produce the several kinds of cereal malt; mixing the several kinds of cereal malt, soybeans soaked in water to make them absorb water, steamed and cooled, and salt followed by fermenting the mixture so that miso provided with flavor and excellent nutritive values in each of the cereals in the several kinds of cereal malt can be easily obtained.
