Abstract:

To provide a method for producing soymilk by which soymilk having free concentration within 0.1-20 wt.% can be obtained.

The method for producing soymilk comprises setting a formulation ratio of frozen bean curd to 0.1-22 wt.% based on water or adjusted water, a heating condition at 100-130°C, and a product pH to 6-9, and varying the combination of the conditions so as to obtain the soymilk having free concentration. Specifically, the high-concentration soymilk can be obtained by setting the conditions as follows: the formulation ratio of frozen bean curd based on water or adjusted water to 15-22 wt.%, a heating condition at 115-130°C, and pH 7-9 of the water or the adjusted water.
