To provide a method for easily producing soymilk which contains a large amount of GABA and has excellent flavor, at a low cost without affecting soymilk quality.
This method for producing the soymilk comprises a liquidizing process of obtaining mixed liquid of a soybean crushed matter and water, or solution obtained by removing water insoluble component from the mixed liquid, a pH decreasing process of decreasing pH of the mixed liquid or the solution to the vicinity of optimum pH of glutamic acid decarboxylase, a holding process of holding the mixed liquid or the solution for a fixed time in a condition of producing no precipitation therein while retaining the decreased pH at the vicinity of the optimum pH, and a pH increasing process of increasing the decreased pH to prescribed pH after the holding process.
