Abstract:
To provide a method for producing a new sugar-coated food as a gelatinous solid food such as gumi candy, having a sugar-coating layer formed on the whole and palate feeling softer than that before treatment.
This method for producing a sugar-coated solid food is characterized by comprising supplying a relations solid food having a water content of ≥6 mass% with a solution for coating a sugar-coating layer while turning the solid food in a turning vessel to form a sugar-coating layer to coat the whole slid food, warming the resultant product under the atmosphere at 38-50°C for 2-20 h and further preferably at a relative humidity of ≤50%.
