Abstract:

To improve qualities of unrefined rice wine, by partially mixing refined rice wine with roughly strained suspension of yeast mash.

The method for producing the unrefined rice wine comprises mixing ordinary rice wine with 20% of the roughly strained suspension of yeast mash of Kimoto (an old rice wine-brewing process fermentation with natural lactobucillus) or fast brewing yeast mash.
