Abstract:

To provide a vinegar produced mainly from sake lees and having improved refreshing feeling while keeping the excellent taste and flavor of sake lees.

The method for producing a vinegar contains (a) a step for the drying and/or extruder-treatment of sake lees, (b) a step for the inoculation of Aspergillus kawachii to the treated product, (c) a step to obtain a sake lees koji by the culture of Aspergillus kawachii and (d) a step to carry out acetic acid fermentation using the sake lees koji as a main raw material. The invention further relates to the vinegar produced by the method.
