Abstract:
To provide a method for producing a safe vitamin K concentrate which is industrially advantageous on food sanitation.
Vitamin K concentrate is efficiently produced by using soy sauce oil or soy sauce lees which is a by-product for production of soy sauce as a raw material and extracting vitamin K with an organic solvent from the material.
