Abstract:
PURPOSE: To provide water-soluble coffee provided with the quality of decocted liquid without an unpleasant flavor intrinsic to instant coffee by extracting roasted coffee by multi-stage extraction and working obtained extract by specified conditions further. CONSTITUTION: The roasted coffee is processed in a percolator by using saturated steam and an essential aroma component is separated as concentrate. Then, the remaining roasted coffee is temperature-raised at a high pressure and primarily extracted by the plural percolators by using extraction water, the evaporation portion is concentrated and further aroma concentrate is obtained. Further, the remaining roasted coffee is temperature-raised at the high pressure and secondarily extracted by the plural percolators and a non-evaporated portion is obtained as secondary extract. Thereafter, tertiary extract is obtained by a similar operation as needed, the obtained extract is concentrated in a multi- stage evaporator and mixed with the two aroma concentrate, a solid density is turned to 35-55%, freeze drying and spray drying are performed further and thus, the object coffee is obtained.
