Abstract:

PROBLEM TO BE SOLVED: To provide a method for iron addition, with which in enriching food and beverage with iron, iron can be readily added, excellently digested and absorbed in the body, food and beverage are not negatively affected by the addition of iron and which can be applied to a wide range of food and beverage.
SOLUTION: A water-soluble iron is mixed and dissolved in a fatty acid ester, sprayed on a dispersion to give a microcapsulated water-soluble iron. The microcapsulated water-soluble iron is readily dispersed into food and beverage when added to the food and beverage, has stability, excellent digestion and absorption in the body and qualities of food and beverage are not negatively affected when the microcapsulated water-soluble iron is added to the food and beverage. The microcapsule can be applied to a wide range of food and beverage due to its excellent dispersibility. This method for producing the water-soluble iron microcapsulated with a fatty acid ester is a simple method for spraying a mixed solution of fatty acid esters on a dispersion to give the microcapsulated water-soluble iron in a high yield.
