Abstract:

To provide a new method for producing wheat flour where part of polished wheat bran is efficiently reduced so as to obtain wheat flour for bread containing active nutrient ingredients contained in the polished barley bran, and enable improvement in its yield rate.

The method comprises the combination of the following processes: a wheat-polishing process of previously eliminating skin parts of raw material crude wheat before pulverization; a milling process of processing polished wheat to obtain wheat flour; an extract-processing process of extracting nutrient ingredients from polished wheat bran produced in the wheat-polishing process and processing the nutrient ingredients to obtain water-soluble wheat-bran extract; and an extract addition process where the water-soluble wheat-bran extract is added to the wheat flour. In the method, both of the milling process and the extract-processing process are sequentially and concurrently performed so as to sequentially add the water-soluble wheat-bran extract obtained in the extract-processing process to the wheat flour processed in the milling process.
