Abstract:
PROBLEM TO BE SOLVED: To provide a method for producing a whey preparation in which the influence of organic acid is reduced from an organic acid-containing whey liquid.SOLUTION: Provided is a method for producing a whey preparation where an organic acid-containing whey liquid is fermented by an organic acid assimilating ferment in the presence of oxygen to obtain a whey preparation in which the influence of organic acid is reduced. It is preferable that the pH of the whey liquid is 6.0 or lower. The organic acid assimilating ferment preferably being a lactose non-assimilating ferment, and more preferably being a Saccharomyces ferment. The organic acid is selected from lactic acid, gluconic acid and citric acid.SELECTED DRAWING: None
