Abstract:

To provide a white sauce causing neither syneresis even after stored for a long period nor demulsification, having fine texture and smoothness, and favorable in meltability in the mouth.

This white sauce contains oil-and-fat adjusted in content to 0.5-10 mass%, and 0.05-1 mass% of diacetyltartaric acid monostearic acid monoglyceride and/or succinic acid monostearic acid monoglyceride.
