Abstract:
To provide a production method of wort or malt extract to be used for production of brewage, the method being capable of reducing the amount of residual unfermented sugar when the wort or malt extract is used as a fermentation source.SOLUTION: A production method of wort or malt extract includes a liquefaction step for liquefying malt at 80°C-120°C using a jet cooker. In the production method, the amount of unfermented sugar is reduced by liquefying raw material malt under a high temperature condition using the jet cooker in the liquefying step.SELECTED DRAWING: None
