Abstract:
PURPOSE: To simultaneously or separately reduce fermented milk or fruit material contents by adding a specified acidic starchy fermented composition based on various kinds of cereal powder and other starch materials to fermented milk and/or fruit material contained foods. CONSTITUTION: The slurry of cereal powder and one kind of non-cereal starch materials at least is pasted and homogenized later and the mixture of strain or acidic strain selected out of Lactobacillus Streptococcus thermorhilus and Bifidobacterium to apply acidity is inoculated. The acidic starchy fermented composition fermented and generated for a period to provide the fermented materials of pH about from 3.5 to 4.2 and at a temperature for providing the same is added to the fermented milk and/or fruit material contained food.
