Abstract:
To provide a method for reducing furocoumarins from a furocoumarins-containing food product containing furocoumarins, and to provide a furocoumarins-reduced food product in which furocoumarins is reduced.SOLUTION: Provided are: a method for reducing furocoumarins, having a leaching step in which a furocoumarins-containing food product containing furocoumarins is leached with a low-temperature solvent; and a furocoumarins-reduced food product in which furocoumarins is reduced by leaching a furocoumarins-containing food product containing furocoumarins with a low-temperature solvent.SELECTED DRAWING: Figure 1
