Abstract:

To provide a method for reinforcing richness and/or thick feeling of a beverage containing milk raw material and polyphenol by which richness and/or thick feeling of a beverage containing milk raw material and polyphenol is/are enhanced.

The method comprises mixing 0.001-0.5 wt.% of γ-polyglutamic acid to a beverage containing the milk raw material and the polyphenol.
