PURPOSE: To efficiently remove cholesterol from animal oil or fat by agitating a mixture of animal oil or fat and an aqueous solution containing cyclodextrin while keeping it at a specified temperature and recovering an oil phase.
CONSTITUTION: Animal oil or fat is mixed with an aqueous solution containing cyclodextrin. The obtained mixture is agitated while keeping it at a temperature as low as possible above the melting point of the oil or fat, and an oil phase is recovered from this mixture. If necessary, the following steps are repeated: (1) the oil phase recovered in the preceding step is mixed again with an aqueous solution containing cyclodextrin; (2) the obtained mixture is agitated while keeping it at a temperature as low as possible above the melting point of the oil or fat; (3) an oil phase is then recovered from this mixture. According to this method, at least 90% cholesterol can be removed in one operation; a high ratio of cholesterol removal can be obtained through a simple and easy operation and a processing for a short time; there will be no change in flavor before and after the processing.
