Abstract:

PURPOSE: To efficiently remove cholesterol in fats and oils and efficiently produce low-cholesterol fats and oils by minimizing the mixing and stirring time of the fats and oils with cyclodextrin.

CONSTITUTION: A 0.5-5wt.% aqueous solution of β-cyclodextrin is added to a mixture solution of fats and oils with a saturated hydrocarbon prepared by mixing 100 pts.wt. fats and oils such as butter oil with 1-50 pts.wt. 5-10C linear saturated hydrocarbon such as n-hexane and the resultant mixture is stirred at a temperature above the melting point of the fats and oils. An aqueous phase part is then removed to separate and collect an oily phase part. Thereby, low-cholesterol fats and oils are produced.
