To provide a method for roasting coffee beans, which improves the taste and flavor of the coffee when roasting green coffee beans, and provides a smaller coffee bean roaster.
The method for roasting coffee beans comprises burning fuel in a burning device 31 in a ceramic dome 32 to heat the ceramic dome 32, roasting green beans 102 accommodated in a roasting tub 10 via radiant heat of far-infrared rays generated from the ceramic dome 32 and convection heat of heated air, and re-burning the burning gas generated accompanying the roasting in the burning device 31 so as to vanish the roasting gas. By the method, the surfaces and the insides of the green beans 102 can be uniformly roasted without burning of bean shell of the green beans 102 and the roasting gas having strong smell is removed from the green beans 102.
