Abstract:

PURPOSE: To obtain in a short period SAKE having the same mellow, good taste as that of SAKE aged for a long period without adding a chemical additive, etc., to rough, new SAKE, by immersing Alkpinia specoisa K. Schum in distilled SAKE in a container.

CONSTITUTION: The central vein is removed from leaf blade of Alpinia specoisa K. Schum., a perennial herb belonging to the family Zingiberaceae, which is immersed in boiling water for about 20 minutes to remove harshness, washed and dried until water content becomes 50wt%. Then about 50g based on 1l distilled SAKE of dried leaf of Alpinia specoisa K. Schum. is immersed in distilled SAKE in a storage container and kept in an immersed state for about 2 weeks while stirring gently about once in two days.
