Abstract:

PURPOSE: To stabilize unstable catalase which is an enzyme for food processing for a long term in a small amount of additives to be added, by adding ammnium chloride, ethanol and sodium citrate in specific amounts respectively to an aqueous solution of the catalase.

CONSTITUTION: 0.5W5% Ammonium chloride, 1W2% ethanol and 1W3% sodium citrate are added to an aqueous solution of catalase and stabilize the liquid catalase.
