Abstract:

PROBLEM TO BE SOLVED: To provide a method for steeping corn which enables starch to be obtained in a high yield.
SOLUTION: This method for steeping corn to produce steep liquor containing a reducing sugar only in a small quantity is (a) to feed fresh steep liquor which contains sulfur dioxide in a concentration of about 1,000-2,200 ppm based on the weight of corn, (b) to steep the corn at about 118°F to about 125°F for >10 h., (c) to separate steep liquor at a rate of 2-4 gallons per one bushel of corn, (d) to adjust the pH value so as to be about 4.2 to about 5.5 during a point of time from about four hours after fresh steep liquor was fed to about one hour before steep liquor is separated from corn, (e) to retain the separated steep liquor at about 118°F to about 125°F for about 10 h. to about 40 h. and (f) to subject the obtained steep liquor to evaporation treatment.
