Abstract:

To provide a method for sterilizing grains by irradiating the grains with electron beams without retrograding starch, denaturing protein, or the like.

This method for sterilizing the grains comprises carrying out polishing treatment of the grains, peeling 1-15 wt.% of the grain weight and then irradiating the peeled grains with electron beams so that the electron beam energy on the surfaces of the grains is 50-200 keV.
