Abstract:
PURPOSE: To sterilize a peroxidase while maintaining activity of peroxidase as a food additive by heating and disinfecting an aqueous solution of peroxidase dissolved in a specific solution.
CONSTITUTION: A peroxidase extracted from horse radish or other plants or a lactoperoxidase separated from milk is preserved in an aqueous solution (pH 3-9) dissolved in ≥0.1mol solution of monovalent salt solution at 62-80°C to carry out the objective sterilization.
