Abstract:
PROBLEM TO BE SOLVED: To provide a method for storing a food product, capable of maintaining the flavor original to the food product at reduced cost.SOLUTION: An aqueous gelatin solution is contacted with a food product at a temperature lower than the gelation temperature of the gelatin so as to form a gelatin film for covering the whole surface of the food product. Examples of the aspect of "contact" include: immersing the food product in the aqueous gelatin solution; and spraying or flowing the aqueous gelatin solution over the food product. The food product may be frozen before contacting with the aqueous gelatin solution.
