Abstract:
To provide a method for suppressing aggregation of a milk-containing food, an aggregation suppressing agent of the milk-containing food, and the milk-containing food.SOLUTION: There is provided a method for suppressing aggregation of a milk-containing food by blending at least one or more components selected from maltobionic acid and a maltobionic acid salt and a basic compound into the milk-containing food. A ratio of a mass of the basic compound to a mass of the component is 0.015 or more. There are also provided an aggregation suppressing agent of the milk-containing food and the milk-containing food. The maltobionic acid salt is preferably calcium maltobionate and magnesium maltobionate. The basic compound is preferably sodium bicarbonate, potassium bicarbonate, trisodium citrate, or tripotassium citrate.SELECTED DRAWING: None
