Abstract:
PURPOSE: To provide a new method for suppressing the oxidation of oil and fat.
CONSTITUTION: Oxidation of oil and fat can be effectively suppressed by adding a superoxide dismutase and casein sodium to the aqueous phase of an O/W-type emulsion.
