Abstract:
PROBLEM TO BE SOLVED: To provide a method for improving healthiness while at least maintaining the good-taste of frozen foods and refrigerated foods.SOLUTION: The method for producing frozen refrigerated food is a method for producing frozen refrigerated food in which a frozen food or refrigerated food containing vegetables is produced and includes a heating selection step and an optimization heating step, and in which, in the optimization heating database, a heating method for improving the antioxidative property is stored for each kind of vegetables, and in the heating selection step, a vegetable, among the vegetables, to be subjected to the optimization heating step is selected, and in the optimization heating step, the vegetable selected in the heating selection step is heated based on the heating method stored in the optimization heating database,.SELECTED DRAWING: Figure 5
