Abstract:
To provide a method for texturizing soybean by which good-quality texturized protein having compact protein tissues and excellent in water retainability even from soybean having high water content and high oil content.
A previously heat-treated soybean raw material is fed to the rear end of a cylinder barrel (1) heated to a required temperature and crudely powdered and accumulated while being transferred to the top of the cylinder barrel (1) by rotatably driving a screw (5) and the soybean raw material accumulated by driving the screw (5) in an axis direction is passed through a screen (20) and a nozzle (17) attached to the top of the cylinder barrel (1) at a high speed under high pressure. Thereby, the soybean is texturized and extruded.
