Abstract:
PURPOSE:To obtain thawed beef as good as raw without dripping, by quick thawing, in other words, by thawing frozen beef to a certain temperature, slicing it at this temperature, then thawing gradually. CONSTITUTION:Frozen beef is thawed in a high-humidity thawing room, and the thawing is stopped, when the beef temperature reaches about -2 deg.C. The beef is sliced at this state, packed, when needed, then thawed gradually.
