Abstract:

PURPOSE: To shorten thawing time and prevent oxidation of food surface in thawing and prevent deterioration of freshness due to thawing by housing a frozen food in a container, packing helium gas into the container and thawing the frozen food by controlling the atmospheric temperature in the container.

CONSTITUTION: A frozen food 2 is housed in a container 1 and then, helium gas from a gap cylinder 3 is packed therein and atmospheric temperature in the container is controlled by a heat exchanger 7. Deterioration of the food can be prevented even if thawing is started at high temperature.
