Abstract:
PURPOSE: To provide a method for thawing frozen tuna, designed to easily provide highly fresh tuna with good appearance without causing drips or its discoloration.
CONSTITUTION: The method is characterized by dividing a tuna at a point when the temperature at the center of the tuna reaches -6 to -4°C during its thawing. Or, the tuna after divided is packed in a water-absorbing packaging material and then preserved in a refrigerator at ≤3°C.
