Abstract:
PROBLEM TO BE SOLVED: To provide methods of obtaining starch from tubers of cassava plants.SOLUTION: Amylopectin starch obtained from cassava tubers having an increased amylopectin content has (1) an amylopectin content of at least 95 mass% and (2) a DP6 t/m12 value of 20.4 or more, and a ratio of DP6 t/m12 to DP13 t/m24 of 20.4/46.0 or more. In a composition, the amylopectin starch is modified physically, chemically or enzymatically.
