Abstract:
NEW MATERIAL:A compound of formula I (wavy lines represent axial or equatorial bonds).
EXAMPLE: Methyl-4,6-0-[3-(1-methylcyclohexen-4-yl)butylidene]-α,D-gluco- pyranoside.
USE: Flavor-maintaining agent.
PREPARATION: Methyl-D-glucoside of formula II is allowed to react with limonene aldehyde dimethyl acetal in an organic solvent such as DMF or dichloro-ethane in the presence of an acid such as p-toluenesulfonic acid or sulfuric acid, preferably at a molar ratio of 1:(0.5W2), for example at 40W150°C for 1W6 hours.
