Abstract:
To obtain a new microorganism and to provide a method for producing a fructooligosaccharide and a neofructcoligosaccharide.
Penicillium citrinum KCTC-10225BP is derived from soil and is capable of producing a fructosyltransferase. The fungus is capable of hydrolyzing sucrose into a fructooligosaccharide represented by chemical formula 1 when n is an integer of 1-5, G is glucose and F is fructose by using the fructosyltransferase and into a neofructooligosaccharide represented by chemical formula 2 when n is an integer of 1-5, G is glucose and F is fructose by using the fructosyltransferase. This method for producing the fructooligosaccharide and the neofructooligosaccharide using the fungus is provided.
