PURPOSE: To provide a migration-resistant oil and fat causing little migration of oil and fat and having excellent meltability in the palate even by using a nut paste having high oil content as a center cream or a main material for sand cream and provide a nut paste produced by using the oil and fat.
CONSTITUTION: The objective oil and fat has an iodine value of 35-60, a trans- acid content of 30-50%, a melting point of 40-55°C, a solid fat content of ≥85%/20°C, ≥60%/30°C, ≥30%/40°C and ≤3%/50°C, preferably ≥90%/20°C, ≥70%/30°C, ≥35%/40°C and ≤3%/50°C and a trans-acid/saturated fatty acid ratio of 0.5-2.0. A center cream having high heat-resistance can be produced by adding 5-20% of the oil and fat to a center cream containing ≥20% nut paste having an oil and fat content of ≥40%.
