To provide a substitute milk composition containing milk components such as powdered skim milk and whey and oil and fat, enabling increasing oil and fat content to 20-70%, free from separating insoluble components owing to excellent emulsification stability when dissolving or dispersing in water or hot water, and capable of preparing without delay substitute milk with less bubbling even in plant scale.
This substitute milk composition contains sucrose fatty acid ester and sorbitan fatty acid ester. It is preferable that the content ratio of sucrose fatty acid ester to sorbitan fatty acid ester in weight ratio is 1:(1.0-2.0), and the total content of an emulsifier including the esters is 0.5-5.0 wt.% in the total weight of the substitute milk composition.
