Abstract:
PROBLEM TO BE SOLVED: To provide a whey mineral composition with which saltiness and bitterness are not felt even if being largely added to a food or drink product and capable of imparting a well-balanced full-bodied natural milk flavor, and a method for imparting a milk feeling to a food or ding product capable of imparting a balanced full-bodied natural milk flavor to a food or drink product.SOLUTION: Provided is a whey mineral composition at least containing a whey mineral and satisfying all the following (1) to (4), and also provided is a method for imparting the milk flavor of a food or drink product where the whey mineral composition is added: (1) the condition where the content of sodium in the solid content is 1.0 to 8.0 mass%; (2) the condition where the content of potassium in the solid content is 4.5 to 18 mass%; (3) the condition where the content of calcium in the solid content is 7.5 to 30 mass%; and (4) the condition where the content of magnesium in the solid content is 1.0 to 5.5 mass%.SELECTED DRAWING: None
