Abstract:

PROBLEM TO BE SOLVED: To obtain a low-protein, high-caloric minced meat processed product same in taste and palate feeling as genuine minced meat and to be used for nephritic patients.
SOLUTION: This processed product is obtained by including 19-37 wt.% of minced meat, 41-23 wt.% of fragmented mannan gel and 5-20 wt.% of fat- and-oil and/or sugar and also incorporating a thickening agent and calcium followed by heating and solidifying the resultant composition to a desired shape.
