Abstract:
PURPOSE: To obtain a mineral supply agent useful as a natural food additive, containing no organic substance prepared by burning a whey concentrate.
CONSTITUTION: A whey mineral concentrate is burnt at 500-1,200°C for 1-5 hours to give a mineral supply agent containing no organic substance. A whey mineral concentrate concentrated to ≥70% ash content in the dried material is used as the whey mineral concentrate. Well-known ion exchange method, electrophoresis method, get filtration method, ultrafiltration method, precipitation recovery method, etc., may be cited as the concentrating means. Since the whey mineral concentrate necessarily contains an organic substance, the concentrate has a color, a fragrance and a flavor derived from the raw material and damages flavor, transparency, color tone, etc., of target foods to which the concentrate is added and causes problems of safety resulting from admixture of agricultural chemical, change with time during preservation and browning during processing under heating. The mineral supply agent is excellent as a natural additive of Ca or K and readily usable because of neutrality of aqueous solution.
