Abstract:

To provide mix flour for baked cakes, which produces baked cakes having light texture and good crispness, is not dried and has a moist texture even after frozen storage in spite of having a volume, and baked cakes.

Dough is prepared by using mix flour for baked cakes comprising modified rice flour that is obtained by applying at least one selected from compressive force, impact force, frictional force, and shear force to rice grain or rice flour and has a degree of swelling of not less than 4.5 and a gelation maximum viscosity of amylograph of not more than 500 BU. The baked cakes are obtained by baking the dough.
